Simple Strawberry Icebox Cake
A no-bake, beginner-friendly dessert with layers of graham crackers, sweetened whipped cream, and fresh strawberries.
INGREDIENTS
• 2 cups heavy cream
• 0.5 cups sweetened condensed milk
• 1 teaspoons vanilla extract
• 14 graham crackers (full sheets)
• 2 pounds fresh strawberries, hulled and sliced
STEPS
1. Whip the cream: In a large bowl, whip 2 cups heavy cream with a mixer until soft peaks form.
2. Sweeten the cream: Add 0.5 cups sweetened condensed milk and 1 teaspoons vanilla extract to the whipped cream and continue whipping until stiff peaks form.
3. First layer: Lay a layer of 14 graham crackers (full sheets) in the bottom of an 8x8-inch baking dish.
4. Add cream and berries: Spread a layer of the whipped cream mixture over the crackers, then top with a layer of 2 pounds fresh strawberries, hulled and sliced.
5. Repeat layers: Repeat the graham cracker, whipped cream, and strawberry layers two more times, so you have 3 layers total.
6. Chill: Cover the dish with plastic wrap and refrigerate.
NOTES
Chill for at least 4 hours, or overnight for the softest, most cake-like texture. Best eaten within 2-3 days.
