Oatmeal Raisin Baked Oatmeal (No Added Sugar)
INGREDIENTS
• 2 ripe bananas, mashed
• 2 cups rolled oats (old-fashioned)
• 1 cups Greek yogurt
• 0.5 cups milk (dairy or unsweetened non-dairy)
• 0.5 cups raisins
• 1 teaspoons cinnamon
• 1 teaspoons vanilla extract
• 1 teaspoons baking powder
• 0.3 teaspoons salt
• 0.3 cups chopped pecans or walnuts (optional, for topping)
STEPS
1. Prep oven and soak raisins: Preheat the oven to 375°F (190°C). Line an 8x8-inch baking dish with parchment paper, leaving an overhang for easy removal. Soak 0.5 cups raisins in warm water for 5 minutes, then drain well.
2. Mix wet ingredients: Mash 2 ripe bananas, mashed in a large bowl until smooth. Whisk in 1 cups Greek yogurt, 0.5 cups milk (dairy or unsweetened non-dairy), and 1 teaspoons vanilla extract until creamy.
3. Add dry ingredients: Stir in 2 cups rolled oats (old-fashioned), the drained raisins, 1 teaspoons baking powder, 1 teaspoons cinnamon, and 0.3 teaspoons salt until combined. Pour into the prepared dish, smooth the top, and sprinkle with 0.3 cups chopped pecans or walnuts (optional, for topping) if using.
4. Bake and cool: Bake at 375°F (190°C) for about 25 minutes, until the center is set and the top is lightly golden. Let cool for 15 minutes, then lift out using the parchment paper and slice into squares.
